The Myson Polished Steel Paella Pan is the authentic version of a traditional Spanish Paella Pan. The carbon steel construction heats quickly, distributes heat evenly, and reacts quickly to temperature changes. The handles are painted with the traditional heat resistant Spanish red paint. The shallow sides and broad base promotes even liquid absorbtion and creates a flavorful rice dish. The dimpled sureface keeps the rice grains separate by increasing the surface area of the base of the pan, and the carbon-steel promotes the formation of the socarrat, caramelized rice that sticks to the bottom of the pan. The polished steel pans do require seasoning before the first use and should be treated like cast iron in terms of long-term care. This style performs best on gas stoves, grills, over open flames or in the oven. It is not recommended for use on electric coil or smooth top stoves.
