Unlike traditional metal pies made from aluminum, tin or steel, the ceramic pie dieshes from Emile Henry to not produce hot spots or un-even browning. Instead, they gently radiate an even heat across the entire crust that creates a tender, golden-brown product. Plus, since the glaze is durable enough to withstand knife cuts, you can cut and serve directly from the dish.
